homemade vegan sushi

it is reading week which means I am home for a few days to relax, catch up on assignments, and of course: read. as someone who doesn’t make the trip home very often, i make spending time with friends from high school a priority. on snapchat a friend of mine posted a photo of some sushi she was having and at first i didn’t even realize it was homemade! being a long-time sushi lover, i reached out – and sure enough, we were able to come up with a day we were both free to make some sushi together!

below are the ingredients we used for our lunch-time sushi: lettuce, cucumber, and avocado. not pictured is the rice and nori paper.

making my own sushi is something i used to do a lot when i was in high school – simple ingredients, typically very healthy, quick and easy preparation. sometimes I would have friends over to make some together, but it was usually my mom and i wrapping up vegetables and rice.

one of the great things about sushi is that you can make any combination you want!
ingredient ideas for vegan sushi rolls:

  • avocado
  • cucumber
  • lettuce
  • shredded carrot
  • lightly fried sweet potato
  • kimchi (spicy pickled vegetables)
  • sprouts
  • mango
  • green beans
  • mushrooms
  • tofu
  • eggplant
  • mock-mayo + siracha for a spicy mayo sauce
  • teriyaki sauce
  • humus

some of my favourite vegan sushi combinations:
1. stir-fried mushroom or eggplant teriyaki
2. avocado + cucumber + sprouts
3. spicy mock mayo + avocado
